Plenty of expectation when one of these is drunk. Yes, apricot jam tarts and a musk melon, quince and green grape compote. Not exactly tropical but absolutely fruity. A drizzle of a reduction where sprigs of thyme, lemongrass and a bit of celeriac have boiled out their piquant herbaceous essence over the fruit. Dried and salted yuzu peel, woody petitgrain and hot white sand. On the tongue some salt dusty rye shows even. And while Irishes are often not weighty this one does own a sense of oily mass in the middle. 91 pts
