Oh beautiful, exactly what you wished for. A soft mélange of christmas spice, fig paste on warm buttery pastry, apple jam and a fields of citrus upwind. While this sounds heavy it is absolutely not. Richer notes are buoyed by aromatics and layered with lacquered oak, dried leaves, cedar, crystallized citrus peel, some light nut oil and baskets of dried persimmons and even a bit of shaved coconut. Tremendously complex! Time has spun these flavours into elegant threads you feel dirty trying to unpick. So let’s not. Classy stuff. 93 pts
