This entry Fino is aged about 3 years (Fino and Manzanilla are seldom more than 8 years old due to the limits of biological aging)
Nose: Hmm.. Dry, and full on yeasty, doughy scents and lime pith. Salted butter, freshly pulled roots. Rather pungent nut-like (won’t say its actually nutty) smack.
Palette: Refreshing and lip smacking and dry. Quite salivatingly so. Aperitif and calls for some ham or olives to cut.I had sweet and savoury biscuits and it went quite well. Starts with some but aromatics, in fact, like almonds, and a bit heavier on the tongue than the nose suggests but otherwise it is as expected.
Finish: Short by whisky standards but its a dry aperitif white. Not bad at all. Nut aromatics and yeast.
No sliding scale that’s just unfair.
