Dornoch New Make August 2019 60% ~ from Organic floor malted Plummage Archer, using spent brewers yeast, fermented in open top oak vats 7 – 10 days
Thick and oily-sweet, met with a real viscosity on the nose. Margarine, thick honey and a heavy but indeterminate fruit, like a muscular and oily fruit eau de vie made from oh… avocado? Overall a clean but big spirit, where the feints aren’t particularly feinty and provide the spirit’s character with an unseen kick. Sightly sour stonefruit eau de vie on the tongue. Designed to be a big boned whisky ready earlier rather than later I think? Clearly the Thompson brothers’ efforts have paid off handsomely. Can’t wait!
Dornoch New Make 63.5% ~ circa April 2018
I should have done this one first, despite the higher strength. This one is missing the 2019’s thickness and weight but instead retained a whole upper register of earthy, herbal-vegetal touches, so much so it’s eerily reminiscent of ultra clean mezcal. Right up my alley! Hair cream. Feints lurking below, and clean hamster cage. On the tongue, a wasabi heat, almost salty even. Right I love Mezcal, so I can’t help but prefer this one right now.
