More meaty, oily and hugely peaty than salty. A whole backyard BBQ all stops removed, sizzling fat on char crusted grills over glowing coals. Thick cut bacon undergoing the Maillard reaction, burnt ends left to carbonize. The salt comes when things calm down a bit. Rock salt and brine. Gherkins, seaweed. Not particularly medicinal or lemony, its all about dense peat and combustion. Cigar smoke, engine exhaust, yes petrochemicals, some dark bitters in brine, india ink and black oily smoke. Muscular and singleminded. 88 pts
